The ‘rich’ variant remains unfiltered and contains particulates known as lignans, which are powerful anti-oxidant phytonutrients, naturally soluble in fatty lipids.

As a result the natural taste and texture of the oil is enhanced. The ‘smooth’ variant is allowed to naturally filter through settlement, whereby the lignans are not included in the bottled oil. This results in a creamier, clearer oil with a more subtle nutty taste.
