Black sesame seeds have a rich nutty flavour, making them a delicious addition to curries or simply eaten straight from the pack, for a protein-rich snack. Although it is an oily seed, the fat content is largely of the unsaturated variety, making it one of the healthier cooking oils to use.

There is a substantial difference between the calcium content of peeled (hulled) versus unpeeled (unhulled) sesame seeds. When the hulls remain on the seeds, one tablespoon of sesame seeds provides about 88mg of calcium. hen the hulls are removed, this same tablespoon will provide about 37mg (nearly 60% less).

Black unpeeled sesame seeds are an excellent source of copper, manganese, calcium, magnesium, iron, phosphorus, vitamin B1, zinc, molybdenum, selenium, and dietary fiber. In addition to these important nutrients, sesame seeds contain two unique antioxidants:- Sesamin and Sesamolin. Both of these nutrients belong to a group of special beneficial fibers called lignans, and have been shown to have a cholesterol-lowering effect in humans, and to prevent high blood pressure and increase vitamin E supplies in animals. Sesamin has also been found to protect the liver from oxidative damage.

The sesamin found in sesame seeds is found to protect the liver against the damage caused by free radicals in the body. Also, the seeds are rich in fiber, lignans (cell reinforcements) and phytosterols (phytochemicals), which can protect against the development of colon cancer.

These same lignans (sesamin and sesamolin) are believed to reduce blood cholesterol levels and prevent high blood pressure. Also, magnesium and calcium are important essential minerals that help regulate blood pressure.
